Making
Palada Prathaman
Store bought Ada – 1
Cup (Any Kerala brand Ada will do. I
used Nirapara brand)
Whole Milk – 5 Cups
Water – 1 Cup
Sugar – 3- 4 Cups
(According to taste u can reduce or increase the quantity of sugar)
Butter – 4tsps.
1. Boil
Milk and water
2. Mix
Ada in to this.
3. Keep
stirring till milk is reduced by 2/3. By this time the milk color will turn to
pink (it will take around 30 minutes)
4. Add
sugar and mix well
5. Add
butter let it melt its own.
6. Serve
hot / chill.
You can use store
bought Ada or make Ada from Scratch. My friend made this
Pradaman from scratch and I am attaching her recipe below.
Making
batter for the Ada
Raw Rice – 2 Cups
Sugar – 2 Cups
Ghee – 4 tsp
Sugar – 4 tsp
Soak rice for 2 hours.
Stain well. Grind in to fine powder and sieve through a fine sieve. Now add
4tsp of melted ghee, 4 tsp of sugar and hot water to get the consistency like
chappathi batter.
Making
the Ada
Cut the plantain
leaves in to squares. Hold them on the fire for a few seconds to make them
flexible.
Boil water in a big
vessel. Take small sized portions (Lemon size)of batter and spread on the back
side of the leaves. Immediately drop in the boiling water. When ada is well
cooked it will float on the water.
Drain the water and
chop the ada.
